For lunch today we tried out this couscous recipe that we found on Epicurious.com. It’s a fairly simple dish with just a few ingredients. It’s great as a main course, but could easily be a side dish too. We had never really cooked with couscous before, but it turns out they’re really easy to prepare.
I did some reading up on Middle Eastern Couscous (also known as Israeli Couscous) to see the nutritional value. Turns out, according to Livestrong.com, that couscous are high in calories, about 650 per 1 cup serving. Worry not though, the recipe from Epicurious only uses 3/4 of a cup for the whole recipe. Couscous are also a great source of carbs. The same 1 cup serving is about 134g of carbs! That was nice to hear, because as a runner I’m always looking for good sources of carbs. Carbs = energy, which is good, but only if you use them. If you take in a high carb diet, but aren’t active, then carbs store up in your body. Couscous are also a good source of vitamin C.
